Rachel Foster, Regional Group Fitness Director of all Mayfair Clubs took on the IDFA Novice Classic Fitness and Figure competition on Sunday, May 13th in Mississauga at the Meadowvale Theatre where she placed 2nd. This Saturday (May 19th) she will be taking part in the GNC Luchka/O’Brien OPA classic in Port Credit at the Port Credit High School.

Rachel has a degree in Kinesiology and Athletic Therapy from the University of Calgary and has been involved in fitness for many years. A former competitive swimmer, she developed a passion for sport and movement at a young age. This inspired her to pursue a career in health and fitness. Rachel loves exploring new fitness concepts and finding ways to keep things challenging and fun. From group exercise classes to spinning, weights and yoga, Rachel loves sharing her passion with others. Here’s how she stays in shape and what she’s doing to ensure she wins.

The power of setting goals

“When I was in high school a goal of mine was to compete in a fitness and figure competition. It never panned out. It’s a lot of sacrifice, dedication and hard work and being so young I was not committed to that kind of change.

Since becoming a part of the Mayfair Clubs team, one of my goals is to make a difference in the realm of health and fitness. I am surrounded by people who are like-minded and active, so for me there is no excuse, I am at the clubs 24/7, the time is now. For me this challenge is about going through the physical process of finding out what I am capable of achieving in a very healthful way. I am not interested in damaging my body.

I have done my homework in finding a healthy federation IDFA (International Drug Free Association). Their approach is to be 100% natural when you step on stage. I will not be competing against competitors that have taken enhancements. I need to remember that my body is the trophy and I have worked hard to get to where I am today.

I have been able to develop new relationships with Mayfair Clubs members and people within the fitness industry because they have seen my transformation. I have learned more about myself, and am aware of a higher sense of being, witnessing what I am capable of. Part of my life mission is to promote physical activity globally. People have been inspired by my achievements and it has been a very humbling experience.

12 weeks ago I started to train, 8 weeks ago I started training with coaches. My diet is very high in protein and complex carbohydrates like green vegetables. In the beginning my day started off by drinking a litre of water to flush out my body, followed by a six egg white omelet mixed with superfoods. I take vitamins and protein shakes with healthy fats like avocado and blueberries for antioxidants splashed with phytonutrients. This is just a sample of what my morning intake is like. As I have progressed through the process my diet has changed to reflect my burn count and health needs. I eat six times a day, whereas before I ate 3 times and was considered “a carb junkie”. It took 2 to 3 weeks on the new food plan to notice a change in my body. I only consume simple sugars, mostly from blueberries and my daily grapefruit. I do not eat any other sugars and I don’t miss them. This particular food plan is the key to my success. For females it’s about managing your hormone and cortisol levels. If you have the right nutrition in your diet you will not crave those types of things (sugar/salt). If you have a good balance of protein, carb and fat you should never feel hungry.

I teach 7 to 15 classes a week and work out 6 days a week. My workouts consist of focusing on one body part a day, one to two hours a day. For example, 1 hour of shoulders, back or abs with weights and 1 hour of cardio.

In preparation for my upcoming fitness competition, I also needed to learn skills that had nothing to do with nutrition or workouts. For example, walking in 5 inch heels while wearing a bikini, attending conditioning and posing camps. I am the odd duck out, a jock, completely out of my element. On competition day, it will come down to who can grace the stage with confidence, poise, and femininity all while portraying muscular definition through various poses with ease.”

Canola oil cooking spray
4 cups (2 oz.) baby spinach leaves
16 pitted kalamata olives, coarsely chopped

Vinaigrette
2 tbsp. canola oil
2 tbsp. red wine vinegar
1 tbsp. water
1/8 tsp. salt
1/2 medium clove garlic, minced
1/8 tsp. dried red pepper flakes
1 tbsp. chopped fresh oregano leaves or 1 tsp. dried oregano leaves

Preparation

Steam potatoes and green beans for 6 minutes or until just tender. Drain and rinse with cold water, shaking off excess liquid.

While vegetables are cooking, combine vinaigrette ingredients in a small jar, secure with lid, and shake well to blend completely. Set aside 1/4 cup of vinaigrette and brush remaining vinaigrette (1 tbsp.) over fish.

Coat a grill pan with cooking spray and heat over medium-high heat until hot. Grill tuna over high heat for 3 minutes on each side or until medium-rare or desired degree of doneness. Do not overcook or fish will be tough.

Divide greens equally on four serving plates. Arrange potatoes, green beans, and olives over greens. Drizzle 1 tbsp. of vinaigrette evenly over each salad and top with tuna. Fresh tip: fish is always best if purchased and prepared the same day.
